Gabriele Bartolini e8af4fcd93 docs: clarify observability metrics and migration to plugin-based metrics 
Improved the "Observability" section to better describe the Prometheus
metrics exposed by the Barman Cloud Plugin via the instance manager.
Added a mapping table in the "Verify your metrics" step to show the transition
from in-core metrics (`cnpg_collector_*`) to the new plugin-based metrics
(`barman_cloud_cloudnative_pg_io_*`).

Closes #473

Barman Cloud CNPG-I plugin for CloudNativePG

The documentation for the Barman Cloud Plugin for CloudNativePG is available at https://cloudnative-pg.io/plugin-barman-cloud.

The Barman Cloud CNPG-I plugin is a component of the CloudNativePG project and adheres to the same community-driven governance model under the CNCF.
