Bump the Dagger engine version and Go toolchain across all three
dagger modules (check-doc-version, e2e, gotest), pulling in the
matching SDK and transitive dependency updates.

To reduce the security alerts we update the dagger modules: check-doc-version
and gotest to the latest versions inside the go.mod files
